Rinse bok choy thoroughly and separate the leaves from the stalks if large
Trim the base and cut into halves or quarters if needed
Pat dry to reduce splattering
Heat a pan over medium-high heat
Add oil and swirl to coat the pan
Add minced garlic or ginger if desired and cook briefly
Add the bok choy stalks first and stir-fry for 1 to 2 minutes
Add the leaves and cook for 1 to 2 minutes more
Toss frequently until the bok choy is bright green and tender-crisp
Add salt, pepper, soy sauce, or sesame oil to taste
Remove from heat and serve immediately
