Preheat the oven to 425°F
Pat the branzino dry
Score the skin on both sides
Season inside and out with salt and pepper
Stuff the cavity with lemon slices, garlic, and herbs
Drizzle with olive oil
Place on a lined baking sheet or in a baking dish
Roast for 18 to 22 minutes, until the flesh flakes easily
Broil for 1 to 2 minutes for extra crisp skin, if desired
Remove from the oven and let rest briefly
Serve with fresh lemon juice and herbs
