Rinse the soft shell crabs under cold water
Pat them completely dry with paper towels
Remove the gills, mouthparts, and apron if needed
Season lightly with salt and pepper
Dredge in flour, cornstarch, or seasoned breading
Heat oil or butter in a skillet over medium-high heat
Place the crabs in the hot pan
Cook until golden brown on one side
Flip and cook the other side until crisp and cooked through
Drain on paper towels
Serve immediately with lemon or your preferred sauce
