Pat the yellowfin ahi tuna dry with paper towels
Season lightly with salt and black pepper
Heat a skillet or grill pan over high heat until very hot
Add a small amount of oil with a high smoke point
Sear the tuna for 30 to 60 seconds per side for rare
Sear longer if you want it more cooked
Cook the edges briefly if needed
Remove from heat immediately
Let it rest for 1 to 2 minutes
Slice against the grain
Serve with soy sauce, citrus, or your preferred seasoning
