Preheat a skillet, grill, or grill pan over medium-high heat
Form ground beef into patties slightly wider than the buns
Make a small indentation in the center of each patty
Season both sides with salt and pepper
Place patties on the hot cooking surface
Cook without pressing down on the burgers
Flip once the first side is browned
Cook the second side until desired doneness
Add cheese near the end if desired
Toast the buns if desired
Remove burgers from heat and let rest briefly
Assemble with buns and toppings of choice
