Wash and peel the calabaza
Cut it into large chunks
Remove the seeds and stringy center
Place the pieces in a pot
Add enough water to cover the bottom of the pot
Add piloncillo or brown sugar
Add cinnamon sticks
Add cloves if desired
Add a strip of orange peel if desired
Cover and cook over medium heat
Simmer until the calabaza is tender
Stir occasionally to prevent sticking
Cook until the syrup thickens
Remove from heat
Serve warm or at room temperature
