Place eggs in a single layer in a saucepan
Add cold water until eggs are covered by about 1 inch
Add 1 teaspoon baking soda or 1 tablespoon vinegar to the water
Bring water to a full boil over medium-high heat
Turn off the heat and cover the pan
Let eggs sit in the hot water for 10 to 12 minutes
Prepare an ice bath with cold water and ice
Transfer eggs to the ice bath immediately
Let eggs cool for at least 5 to 10 minutes
Gently tap and roll eggs on a hard surface to crack the shell
Peel under running water or in a bowl of water
Start peeling from the wider end where the air pocket is located
