Preheat the stainless steel pan over medium to medium-low heat
Add a small amount of oil or butter
Test the heat with a drop of water or a small bit of egg
Crack the eggs into a bowl first
Gently pour the eggs into the pan
Reduce the heat if the eggs start to stick or sizzle too hard
Let the eggs cook until the edges set
Use a thin spatula to lift the eggs carefully
Flip only if desired and cook briefly on the other side
Remove the eggs from the pan as soon as they are done
Clean the pan after it cools slightly
