Heat a nonstick skillet over medium-low to medium heat
Add a small amount of butter or oil
Crack the eggs into the skillet
Cook until the whites are mostly set
Gently break the yolks with a spatula
Flip the eggs carefully
Cook the second side for 15 to 30 seconds
Remove when the yolks are still slightly runny but the whites are fully set
Season with salt and pepper if desired
