Trim the ends of the French green beans
Rinse the beans under cold water
Bring a pot of salted water to a boil
Add the beans to the boiling water
Cook for 2 to 4 minutes until tender-crisp
Drain the beans immediately
Transfer the beans to ice water to stop cooking
Drain again and pat dry
Heat butter or olive oil in a skillet
Add the beans and sauté for 1 to 2 minutes
Season with salt and pepper
Add garlic, lemon juice, or herbs if desired
