Pat the lamb chops dry with paper towels
Season both sides with salt, black pepper, garlic powder, and rosemary or thyme
Optional: rub with olive oil and minced garlic
Place the lamb chops on a baking sheet or oven-safe skillet
Bake for 8 to 12 minutes for medium-rare, depending on thickness
Flip the chops halfway through cooking
Check internal temperature with a meat thermometer
Remove at 125°F to 130°F for medium-rare
Remove at 135°F for medium
Let the lamb chops rest for 5 minutes before serving
