Remove the steak from the refrigerator 20–30 minutes before cooking
Pat the steak dry with paper towels
Season both sides with salt and pepper
Preheat a skillet, grill, or cast-iron pan over high heat
Add a small amount of oil if using a pan
Place the steak on the hot surface
Cook for 3–5 minutes on the first side
Flip the steak
Cook for 3–5 minutes on the second side
Check for medium doneness with a meat thermometer: 140–145°F
Remove the steak from the heat
Let the steak rest for 5–10 minutes
Slice and serve
