Remove the NY strip steak from the refrigerator 30–45 minutes before cooking
Pat the steak dry with paper towels
Preheat the oven to 400°F
Season both sides generously with salt and black pepper
Heat an oven-safe skillet over high heat on the stovetop
Add a small amount of oil with a high smoke point
Sear the steak for 2–3 minutes per side
Sear the fat edge for 30 seconds if desired
Transfer the skillet to the preheated oven
Roast until the steak reaches your desired internal temperature
Check temperature with a meat thermometer
Remove at 125°F for rare
Remove at 130°F for medium-rare
Remove at 140°F for medium
Remove at 150°F for medium-well
Transfer the steak to a plate or cutting board
Rest for 5–10 minutes
Slice against the grain
Serve immediately
