Bring the water to a gentle simmer
Lightly grease the poaching cups with butter or oil
Crack one egg into each cup
Place the poaching insert into the pan
Cover the pan with a lid
Cook until the egg whites are set and the yolks reach your preferred doneness
Remove the poaching cups carefully
Lift the eggs out with a spoon or spatula
Serve immediately
