Fill a pan with 2–3 inches of water
Add a splash of vinegar if desired
Bring the water to a gentle simmer
Crack each egg into a small bowl
Stir the water to create a gentle whirlpool
Slide the egg into the center of the pan
Repeat with additional eggs
Cook for 3–4 minutes for a soft yolk
Cook longer for a firmer yolk
Remove the eggs with a slotted spoon
Drain on paper towels
Season with salt and pepper
Serve immediately
