Crack 2 to 3 eggs into a bowl
Add a pinch of salt and pepper
Whisk until fully combined
Heat a nonstick skillet over medium heat
Add butter or oil to the pan
Pour in the eggs
Let the eggs cook until the edges begin to set
Gently lift the edges and tilt the pan so uncooked egg flows underneath
When the top is mostly set, add fillings if desired
Fold the omelet in half
Cook for 30 to 60 seconds more
Slide onto a plate and serve
