Preheat the oven to 300°F
Pat the pork Boston butt dry with paper towels
Trim excess fat if desired, leaving some fat for moisture
Rub the pork all over with salt, black pepper, and any desired seasonings
Place the pork in a roasting pan or Dutch oven with the fat side up
Add a small amount of liquid to the pan if desired, such as water, broth, or apple juice
Cover tightly with a lid or aluminum foil
Roast for about 1 hour per pound, or until the internal temperature reaches 195°F to 205°F
Check the temperature with a meat thermometer in the thickest part
Remove from the oven and let rest for 20 to 30 minutes
Shred or slice the pork as desired
Serve with pan juices or your preferred sauce
