Pat pork cutlets dry
Season both sides with salt and pepper
Optional: dredge in flour, then beaten egg, then breadcrumbs
Heat oil or butter in a skillet over medium-high heat
Add the cutlets in a single layer
Cook 2 to 4 minutes per side until golden brown
Reduce heat if browning too quickly
Cook until the internal temperature reaches 145°F
Transfer to a plate and rest for 3 minutes
Serve immediately
