Choose a pork shoulder or pork butt
Trim excess fat if needed
Mix a dry rub with salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and chili powder
Coat the pork evenly with the rub
Let the pork rest in the refrigerator for several hours or overnight
Preheat the oven, smoker, or slow cooker
Cook the pork low and slow until tender
Add barbecue sauce during the last part of cooking if desired
Check that the pork is very tender and pulls apart easily
Remove the pork and let it rest
Shred the pork with two forks
Mix in more barbecue sauce if desired
Serve on buns, sandwiches, or with sides
