Preheat oven to 275°F (135°C)
Line a baking sheet or roasting pan with foil
Pat ribs dry with paper towels
Remove the membrane from the back of the ribs (optional but recommended)
Season both sides with salt and pepper
Apply a dry rub or your preferred spice blend generously
Place ribs bone-side down in the pan
Cover tightly with foil
Bake 2.5 to 3.5 hours, until tender and a knife slides into the meat easily
Remove foil and brush ribs with BBQ sauce (optional)
Increase oven temperature to 400°F (205°C)
Bake uncovered 15 to 25 minutes, until sauce is sticky and ribs are browned
For extra tenderness, broil 2 to 4 minutes at the end (watch closely)
Rest ribs 10 minutes before slicing
Slice between the bones and serve
