Preheat oven to 275°F to 300°F
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Season both sides with salt, pepper, and dry rub
Place ribs on a foil-lined baking sheet or in a roasting pan
Cover tightly with foil
Bake for 2.5 to 3.5 hours for pork ribs, or 3 to 4 hours for beef ribs
Check for tenderness; meat should pull back from the bones
Uncover ribs
Brush with barbecue sauce if desired
Increase oven temperature to 400°F to 450°F
Bake uncovered for 10 to 15 minutes to caramelize the sauce
Rest ribs for 10 minutes before serving
Slice between the bones and serve
