Heat a nonstick skillet over low to medium-low heat
Add a small amount of butter or oil
Crack eggs into a bowl, then slide them into the skillet
Cook undisturbed until the whites are set and the edges look set
If the yolks are too runny, add 1–2 teaspoons of water to the pan and cover with a lid for 30–60 seconds
Season with salt and pepper to taste
Carefully remove with a spatula and serve immediately
