Choose a ripe jackfruit and place it on a large cutting board
Oil your knife, hands, and cutting board lightly to reduce stickiness
Cut the jackfruit in half lengthwise
Cut each half into smaller sections
Remove the core from each section
Pull out the yellow pods by hand or with a knife
Remove the seeds from the pods if needed
Trim away the white fibrous parts and outer rind
Discard the sticky latex-covered parts or oil your knife again if needed
Store the cut jackfruit in a container or use immediately
