Wash and peel the potatoes
Slice the potatoes thinly and evenly
Rinse the slices in cold water
Soak the slices in cold water for 20 to 30 minutes
Drain and dry the slices completely
Heat oil in a deep pan or fryer
Fry the potato slices in small batches until golden and crisp
Remove the chips and drain on paper towels
Sprinkle with salt or seasoning while hot
Let the chips cool before serving
