Heat oil or a mix of oil and butter in a skillet over medium to medium-high heat
Test the oil by sprinkling in a little flour; it should sizzle
Place pork chops in the hot skillet without crowding
Fry for 3 to 5 minutes per side, depending on thickness
Flip once the first side is golden brown
Cook until the pork chops reach an internal temperature of 145°F
Remove from the skillet and let rest for a few minutes before serving
