Open Instagram
Go to your profile
Tap the menu icon
Tap Settings and privacy
Tap Messages and story replies
Tap Show activity status
Turn off Show activity status
If needed, also turn off Active status in Instagram Direct settings
Note that this also hides when you are active from others
