Gather rolled oats, honey or maple syrup, nut butter, chopped nuts, seeds, dried fruit, salt, and vanilla
Line a baking pan with parchment paper
Mix oats, nuts, seeds, dried fruit, and salt in a bowl
Warm honey or maple syrup with nut butter and vanilla until smooth
Pour the wet mixture over the dry ingredients
Stir until everything is evenly coated
Press the mixture firmly into the lined pan
Chill in the refrigerator until set, or bake at a low temperature until lightly golden
Let cool completely
Lift out of the pan and cut into bars
Store in an airtight container
