Choose a pork shoulder or pork butt
Trim excess fat if needed
Mix salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and chili powder
Rub the seasoning all over the pork
Let the pork rest for at least 1 hour or overnight in the refrigerator
Preheat the oven, smoker, or slow cooker
Cook the pork low and slow until tender
Add BBQ sauce during the last part of cooking if desired
Check that the pork reaches an internal temperature of about 195 to 205°F
Remove the pork and let it rest
Shred the pork with forks or meat claws
Mix the shredded pork with more BBQ sauce if desired
Serve on buns, tacos, or plates
