Gather ingredients:
Biscuits: all-purpose flour, baking powder, salt, cold butter or shortening, cold milk or buttermilk
Gravy: breakfast sausage (or butter), all-purpose flour, milk, salt, black pepper
Preheat oven to 450°F (232°C)
Make biscuits:
Whisk flour, baking powder, and salt in a bowl
Cut in cold butter/shortening until mixture looks like coarse crumbs
Stir in cold milk just until dough comes together
Turn dough onto a lightly floured surface and gently fold 1–2 times
Pat to about 1-inch thickness
Cut biscuits and place on a baking sheet
Bake 10–14 minutes until golden brown
Make gravy:
Cook sausage in a skillet over medium heat until browned
Drain excess grease if needed, leaving about 2–3 tablespoons fat
Stir in flour and cook 1–2 minutes, whisking constantly
Gradually whisk in milk until smooth
Simmer 3–6 minutes until thickened; season with salt and black pepper
Serve:
Split hot biscuits and spoon gravy over the top
