Peel the potatoes if desired
Cut the potatoes into small cubes
Boil the potatoes for 5 to 7 minutes until just tender
Drain and pat the potatoes dry
Heat oil or butter in a skillet over medium-high heat
Add the potatoes to the skillet in a single layer
Season with salt, pepper, garlic powder, and paprika
Cook without stirring for a few minutes to brown the bottoms
Stir occasionally and cook until golden and crispy
Add diced onions or peppers if desired
Cook until the vegetables are soft
Serve hot
