Add powdered sugar gradually and mix until a firm dough forms
Roll the mixture into small balls
Place the balls on a parchment-lined tray
Chill the balls in the refrigerator until firm
Melt the chocolate until smooth
Insert a toothpick into each chilled ball
Dip each ball into the melted chocolate, leaving a small circle of peanut butter exposed on top
Return the coated buckeyes to the parchment-lined tray
Chill until the chocolate is set
