Soak the beans overnight in water, or use a quick-soak method
Drain and rinse the beans
Add the beans to a large pot with 8 cups of water or broth
Bring to a boil, then reduce to a simmer
Cook until the beans are tender, about 1.5 to 2 hours
In a skillet, cook chopped bacon until crisp
Add chopped onion and cook until softened
Add minced garlic and cook briefly
Add chopped jalapeños or serrano peppers
Add diced tomatoes
Stir in chopped ham or chorizo if desired
Add the cooked bacon mixture to the beans
Season with salt, black pepper, cumin, and oregano
Add chopped cilantro
Simmer everything together for 20 to 30 minutes
Adjust seasoning as needed
Serve hot
