How To Make Chinese Rice?

Rinse 1 cup of rice until the water runs clear

Drain the rice well

Add the rice to a pot with 1 1/4 cups water

Add a pinch of salt if desired

Bring to a boil over medium-high heat

Reduce the heat to low

Cover the pot with a tight-fitting lid

Simmer for 15 to 18 minutes

Turn off the heat

Let the rice sit covered for 5 to 10 minutes

Fluff the rice with a fork

Serve plain or with soy sauce, scallions, or vegetables
