Preheat oven to 400°F (205°C)
Grease an 8-inch square baking pan or a 9-inch round pan
In a bowl, whisk together: 1 cup yellow cornmeal, 1 cup all-purpose flour, 1/4 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt
In a separate bowl, whisk together: 1 cup milk, 1/2 cup melted butter (or neutral oil), 2 large eggs
Pour wet ingredients into dry ingredients and stir until just combined
Pour batter into prepared pan
Bake 18–25 minutes, until golden and a toothpick comes out clean
Let cool 5–10 minutes before slicing
