Wash and peel the potatoes if desired
Cut the potatoes into even strips
Soak the cut potatoes in cold water for 20 to 30 minutes
Drain and dry the potatoes thoroughly
Heat oil in a deep pan or fryer to about 350°F to 375°F
Fry the potatoes in small batches until soft and lightly golden
Remove and drain the fries on paper towels
Increase the oil temperature if needed to about 375°F to 400°F
Fry the potatoes again until crisp and golden brown
Drain the fries on paper towels
Season with salt immediately
Serve hot
