2 tbsp cumin seeds
2 tbsp coriander seeds
1 tbsp black peppercorns
1 tbsp green cardamom pods
1 tbsp cloves
2-inch cinnamon stick
1 tsp fennel seeds
1 tsp nutmeg, grated
2 bay leaves
1 star anise
1 small piece mace
Dry roast all spices on low heat until fragrant
Let the spices cool completely
Grind to a fine powder
Sift if needed for a smoother texture
Store in an airtight container
Keep in a cool, dry place
