How to Make Ginger Candy?

Peel and thinly slice 1 cup fresh ginger

Place ginger in a pot and cover with water

Bring to a boil, then simmer for 30 minutes

Drain the ginger and repeat boiling in fresh water 1 to 2 more times for a milder flavor

Combine 1 cup sugar and 1/2 cup water in a pot

Heat until the sugar dissolves and the syrup thickens slightly

Add the drained ginger slices to the syrup

Cook over low heat, stirring often, until the syrup is mostly absorbed

Remove the ginger pieces and place them on a wire rack or parchment paper

Toss the ginger in granulated sugar while still slightly sticky

Let the ginger candy dry completely before storing

Store in an airtight container
