Peel fresh ginger
Slice ginger into thin, even pieces
Place ginger in a pot and cover with water
Bring to a boil
Simmer until ginger is tender
Drain the ginger
Repeat boiling in fresh water if you want a milder flavor
Combine equal parts sugar and water in a pot
Heat until the sugar dissolves
Add the drained ginger to the syrup
Simmer until the ginger becomes translucent and the syrup thickens
Remove the ginger with a slotted spoon
Toss the ginger in granulated sugar
Spread the pieces on a wire rack or parchment paper
Let the ginger dry completely
Store in an airtight container
