Wear gloves
Wash the peppers
Remove stems
Remove seeds for less heat
Chop the peppers
Peel and chop garlic if using
Add peppers, garlic, salt, and vinegar to a saucepan
Add water if needed to cover the ingredients
Simmer until peppers are soft
Cool the mixture slightly
Blend until smooth
Strain for a thinner sauce if desired
Taste and adjust salt or vinegar
Pour into a clean bottle or jar
Refrigerate after cooling
Shake before using
