Pat the lamb chops dry
Season both sides with salt and black pepper
Add garlic, rosemary, thyme, and olive oil if desired
Let the chops sit at room temperature for 15 to 30 minutes
Heat a skillet or grill over medium-high heat
Add a little oil to the pan if using a skillet
Place the lamb chops in the hot pan or on the grill
Cook for 3 to 4 minutes per side for medium-rare, or longer for desired doneness
Sear the edges briefly if the chops are thick
Remove the lamb chops from the heat
Rest the lamb chops for 5 minutes before serving
Serve with your preferred sides
