Add cocoa butter to the melted chocolate
Warm the chocolate gently to keep it fluid
Stir in a little more melted chocolate if it is too thick from cooling
Avoid adding water or liquid ingredients
Use a double boiler or short microwave bursts to prevent overheating
Sift in a small amount of powdered sugar only if sweetness and texture are acceptable
Keep utensils and bowls completely dry
Thin with warm cream only if making ganache or a similar mixture
