1 box Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
2 tablespoons melted butter
2 tablespoons sour cream or plain Greek yogurt
1 tablespoon honey or sugar
Preheat oven to 400°F
Grease an 8×8-inch baking dish or muffin tin
Mix Jiffy mix, egg, milk, melted butter, sour cream, and honey until just combined
Do not overmix
Pour batter into prepared pan
Bake 15 to 20 minutes for muffins or 20 to 25 minutes for an 8×8-inch pan
Remove when golden and a toothpick comes out clean
Brush with melted butter after baking
Let cool slightly before serving
