Heat a large pot or popcorn maker over medium-high heat
Add 2 to 3 tablespoons coconut oil or refined peanut oil
Add 3 to 4 popcorn kernels and cover the pot
When the test kernels pop, add 1/2 cup popcorn kernels
Cover the pot and shake it occasionally while popping
Remove from heat when popping slows to 2 to 3 seconds between pops
Melt 1/4 cup clarified butter or use butter-flavored topping
Pour the popcorn into a large bowl
Drizzle the melted butter over the popcorn
Sprinkle with 1 to 2 teaspoons fine salt
Toss the popcorn well to coat evenly
Add more salt or butter to taste
