Fill a pan with about 2 to 3 inches of water
Add a splash of vinegar if desired
Bring the water to a gentle simmer, not a boil
Crack each egg into a small bowl or cup
Stir the water gently to create a slight whirlpool
Slide the egg into the center of the water
Repeat with additional eggs, leaving space between them
Cook for 3 to 4 minutes for a soft yolk
Cook a little longer for a firmer yolk
Remove the eggs with a slotted spoon
Drain on paper towels
Season with salt and pepper before serving
