How to Make Red Eye Gravy?

Fry 4 to 6 slices of country ham in a skillet over medium heat

Remove the ham and keep it warm

Leave 2 to 3 tablespoons of drippings in the skillet

Add 1/2 cup hot water to the drippings

Stir and scrape up any browned bits from the pan

Simmer for 1 to 2 minutes

Add 1/4 to 1/2 cup strong black coffee

Stir until combined

Season with black pepper to taste

Serve hot over ham, biscuits, or grits
