Crack eggs into a bowl
Add a pinch of salt and pepper
Whisk until the yolks and whites are fully combined
Heat a nonstick skillet over low to medium-low heat
Add butter (or oil) and let it melt and coat the pan
Pour in the eggs
Let them sit briefly, then gently stir with a spatula
Keep stirring slowly until the eggs form soft, creamy curds
Remove from heat when still slightly glossy
Serve immediately
