Place 2 pounds chicken breasts or thighs in a pot or skillet
Add enough water or chicken broth to cover the chicken
Add salt, pepper, garlic powder, onion powder, and cumin
Bring to a boil, then reduce to a simmer
Cook until the chicken reaches 165°F and is fully cooked
Remove the chicken from the liquid
Let it rest for a few minutes
Shred the chicken with two forks or a hand mixer
Return the shredded chicken to the pan
Add taco seasoning, salsa, or a little cooking liquid
Stir and cook for a few minutes until well coated
Serve in tacos with your preferred toppings
