Pat chicken breasts dry
Pound to even thickness
Season with salt, pepper, and desired spices
Heat a grill pan or skillet over medium-high heat
Add a small amount of oil
Place chicken breasts in the hot pan
Cook without moving for 5 to 7 minutes
Flip and cook for another 5 to 7 minutes
Reduce heat if browning too quickly
Cook until internal temperature reaches 165°F
Remove from pan and rest for 5 minutes
Slice and serve
