Wash fresh tomatoes
Remove stems
Score the bottoms with a small X
Blanch tomatoes in boiling water for 30 to 60 seconds
Transfer tomatoes to ice water
Peel off the skins
Remove cores and any damaged spots
Chop the tomatoes
Heat olive oil in a large pot
Sauté chopped onion until soft
Add minced garlic and cook briefly
Add chopped tomatoes to the pot
Stir in salt and black pepper
Add dried basil, oregano, and optional red pepper flakes
Simmer uncovered until thickened
Stir occasionally to prevent sticking
Add a little sugar if the sauce tastes too acidic
Add fresh basil near the end
Blend for a smoother sauce if desired
Taste and adjust seasoning
Use immediately or cool and store
