How To Make Street Corn?

Grill or char 2–3 cups corn (fresh or frozen), turning until lightly blistered

Cut kernels off 4 ears (or use 2–3 cups cooked corn)

In a bowl, mix 1/2 cup mayonnaise, 1/2 cup sour cream, and 1–2 tablespoons lime juice

Stir in 1–2 teaspoons chili powder and 1 teaspoon garlic powder

Add salt and black pepper to taste

Toss corn with the sauce

Sprinkle with 1/2 cup crumbled cotija cheese (or feta)

Top with chopped cilantro

Finish with extra lime wedges and optional extra chili powder or smoked paprika
