Use fresh eggs
Crack eggs into a bowl
Add a pinch of salt
Add a small splash of milk, cream, or water if desired
Whisk until fully combined and slightly frothy
Heat a nonstick pan over low heat
Add butter and let it melt gently
Pour in the eggs
Let them sit briefly, then stir slowly with a spatula
Keep the heat low
Stir continuously or in gentle folds
Remove from heat while still slightly soft and glossy
Season with black pepper
Serve immediately
